  2. 300 g pork belly
  3. Marinate sauce
  4. 3 clove garlic
  5. 2 coriander roots (you can use a handful of coriander stalk instead) 1 tbsp ground white pepper
  6. 1 tbsp oyster sauce
  7. 1 tbsp soysauce
  8. 1 tsp fishsauce
  9. 1 tbsp sugar
  10. 1 tbsp cornflour
  11. Stir fried
  12. 1 tbsp vegetable cooking oil
  13. 2 clove garlic, finely chopped
  14. 1 onion, cut into 3cm square
  15. 1 carrot, cut into into bite size
  16. 5-8 baby corn, cut into bite size
  17. 5-8 sweetpeas
  18. 1 pepper, cut into 3 cm square
  19. 2 tbsp Thai chilli jam or Nam Prik Pao
  20. 1 tbsp oyster sauce
  21. 1 tsp fishsauce
  22. 1 tsp sugar
  23. Black ground pepper
  24. 2-3 roasted dry chilli (optional)

  1. To make crispy pork belly; Pound garlic, coriander roots and white pepper together in pestle and mortar then add some oyster sauce, sugar fish sauce and soysauce in and mix well.
  2. In a big mixing bowl add pork belly in and pour the sauce in, mix them well. Marinate pork belly overnight and put it in the oven on medium heat for 45 min.
  3. Once cooked, leave it to cook down and cut them up.
  4. To wok ; add vegetable oil in the wok or pan, add garlic and stir well. Add hard vegetable that take longer to cook in first (carrot, onion, pepper) mix well for about 2-3 minutes.
  5. Add sweet pea and baby corn in and stir well. Add Thai chilli jam, fishsauce, oyster sauce and sugar. Stir well together.
  6. Add some roasted dry chillis in (pop your dry chilli in the medium heat oven for 5-8mins) then add your crispy pork belly in. Stir well together and seasoning with ground pepper.
  7. Serve with a bowl of jasmine rice. It’s so delicious!
